Spinach and Cheese-Stuffed Meatballs

This recipe was inspired by my dinner experience at Scaddabush, an upscale Italian restaurant that is known for its amazing meatballs. This is also adapted by the guys from Tasty who makes recipes simple and easy to follow. This was an amazing treat for my family. Despite not making spaghetti noodles to serve with it, this dish also works well with a plate of steaming hot rice!

Ingredients
- 8 oz cream cheese, room temperature
- 1/4 cup cooked spinach
- 2 teaspoons garlic powder
- 1 cup cheddar cheese, shredded
- 1 lb ground pork
- 1 lb ground beef
- 1 egg
- 1/2 cup parsley
- 1/2 cup bread crumbs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 onion, minced
- 4 cloves of garlic, minced
- 1 large can diced tomatoes
- 1 cup parmesan cheese
- Chopped parsley, for garnish
Instructions
- In a bowl, mix cream cheese, spinach, garlic powder and mozzarella cheese. Set aside
- On a separate bowl, mix together the ground beef, ground pork, parsley, egg, and bread crumbs.
- Add salt and pepper to taste on the meat mixture. Set aside.
- Add olive oil to a pan.
- Saute the garlic and onion for about 2 minutes
- Add the diced tomatoes to the pan. Mix well for about 3 - 5 minutes or when it starts to simmer. Set aside.
- Grab about 100 grams of the meat mixture. Turn it into a patty.
- Put a teaspoon of the cream cheese mixture in the middle of the patty
- Roll the patty into a bowl.
- Repeat the process until the meat mixture runs out
- Roll the meatballs into flour. Shake off the excess.
- Cook into the pan, making sure that you roll the meatballs for even cooking and the insides are cooked well.
- Transfer into a serving plate
- Use a serving spoon to spread the tomato mixture on top of the cooked meatballs
- Sprinkle with parmesan cheese and chopped parsley.
- Enjoy!
